~Pomegranate Simple Syrup~

The Pomegranate is one of my Favorite fruits! Its also the hardest one to open up and eat!
I searched my cookbooks, the internet and asked friends via twitter what they use Pomegranats for. Did they have recipes to share or ideas and thoughts. In my search I did find a recipe for a Simple Syrup. I am a huge fan of Simple Syrups. You can use them in so many things!

First I took all the little sacks out of the main shell and peeled away the membranes. Then I measured how
much of the pomegranite sacks I had. I had 2 1/2cups and added 1 quart of water into a sauce pan. Brought them to a rapid bowl and boiled for 15 minutes until the little sacks burst.

Then I put them in my wire strainer, that i usually use to sift flower! But its what I had and it worked! I used a metal ladle I had to push against the sacks to release more juices.

Once all the juice is squeezed out, I measured how much juice there was.
I added the juice back to the pot and added equal amounts of sugar.

I brought the Pomegranate and sugar mixture to a rolling boil for 10 minutes. Set aside and let it cool.

Once syrup is to room temp. You can put in jars for freezing or cute cruettes or bottles for your fridge or as gifts. I have put some in my fridge and freezer. Im also pouring some in Ice Trays to add to drinks.
One of my favorite things to drink is a Shirly Temple. All you need is is some Ice, Sprite and your freshly made simple syrup.

My next Pomegranate recipe will be Jalapeno and Pomegranate Jelly!
Simple things tatse so Delicious! Enjoy!
