Smoked Pork loin w/ infused garlic butter & Apple juice


Our weekend was jammed packed! We had a family reunion and a suprise B-day party for my mother in law. The day of my mother in laws suprise party and boy was she shocked! My most awesome hubby made her a smoked pork loin for dinner. It was about 8 pounds of loin. He infused it with an injector w/ 2 sticks of butter and 2 heads of garlic (shreded with a microplane, love that gadget) some fresh parsley. Then we covered the outside in a mesquite garlic rub, kosher salt and fresh cracked pepper. Let it sit overnight. The next day he got his smoker ready threw on some hickory chips and started the 5 hour smoking process. Every 30 min he sprayed apple juice on the hunk of loin. the last half hour he coated both sides with brown sugar for carmelization. Man was it good! Everyone enjoyed it and there was nothing left. We also had a basil, spinach tomato salad, Fried potatos w/ mushrooms, black beans and onion and some jalepeno poppers i made and we cooked em on the grill. It was a great day of food, family and friends.
