Yes, another Plum post!

Yes Folks you read correctly! This is another post on Plums!
As I have stated in an earlier post, we had access to free Plums. We picked tons of them. This time I have made Plum Preserves! We have been eating The Plum Preserves on Vanilla Ice Cream. What a great treat.
The recipe was a very easy one. When canning easy is always nice.
Here is the recipe.
Plum Preserves
5 cups pitted Plums (about 2 1/2 pounds)
Chop plums in food processor to desired consitancy
4 cups of sugar
1 cup of water
Combine all ingrediants in a large saucepot. Bring slowely to a boil, stirring until sugar dissolves. Cook rapidly almost to gelling point. As mixture thickens, stir frequently to prevent sticking. Remove from heat. Skim foam if neccessary. Ladle hot preserves into hot jars leaving a 1/4 inch headspace. Adjust caps. Process 15 minutes in a boiling water canner. Makes about 5  half pints or 10  4oz jars.
