When Cream Cheese and Pumpkins Collide.....

I love cooking with Pumpkin! I also love cream cheese! These two ingrediants combined make a wonderful explosion of sweet flavor in your mouth! Here is a recipe you will love combining these two great flavors.




Creamy Pumpkin Muffins

1 1/3 c. Sugar divided (I used Raw Sugar, but you can use regular sugar)
1 1/4 c. All purpose flour
2 t. Cinnamon
1 t. Baking Soda
1/2 t. Salt
3 Eggs divided
3/4 c. Oil
1 c. Pumpkin ( I use fresh, Add the spices you like to your fresh pumpkin, you can use can!)
8-oz. pkg. Cream Cheese softened



Combine 1 cup of sugar, flour, cinnamon, baking soda, salt, 2 eggs, oil & pumpkin and set aside.

In a seperat bowl, blend together cream chesse, remaining sugar and egg.

Pour pumpkin mixture into greased muffin cups (or use liners) filling 2/3 full.

Place a heaping teaspoon of cream chesse filling in the center of each muffin.





 Sprinkle each with one teaspoon of topping!  Topping Recipe: 1/4 c. sugar 1/2 t. cinnamon 3 t. all-purpose flour 2 t. butter Combine all ingrediants until crumbly.

Bake at 350 degrees for 15 min. Makes 1 and a half dozen.

I made 12 and a small loaf

    We must be ont he same wavelength in relation to culinary creations, as I made some muffins with my baby squash and cream cheese in a similar vain. I will be showcasing them tomorrow, so do come by and check them out. I think you will approve.

    These look just as tempting, if only I could stick my finger in the screen and scoop up some of that cream. Yum.
