Sunburst Patty Pan & Pink Brandywine meet my frying pan!

The summer bounty of veggies is here! We are eating fresh veggies every night. Its fun coming up with new recipes to try. Here is a Squash dish my Grandma made me mom when she was growing up and then my Mom made it for me as I was growing up. Now I make it for my family.

My Squash recipe calls for Squash, Tomatos & Onion. A few of my favorite things...

I am using Sunburst Patty Pan Squash but you could use any squash you like.

3 medium size Patty Pans
1 pound of tomatos (Im using a Brandywine, it weighed just an ounce under a pound)
Half of a White Onion (Use whatever kind of onion you like)
3 tbls of Olive Oil
1 tbls cracked black pepper

Slice up your Squash, chop your Tomatos and dice your Onion.

Add your Olive Oil to a hot frying pan. Then add your Squash and onion and saute.

After about 7 minutes of cooking add your Tomatos and black pepper. Cook till tomatos are warm.

Doesnt it look Yummy!

We add Cheddar cheese to this while its still in the pan so it can melt over the top. Its really good.
Usually we eat this as a side dish, its also very yummy by itself.

  2. I will definitely try this recipe! Maybe you could eat it over pasta to make it a main dish.

  3. I'm growing grey zucchini and a yellow winter squash (I forget the name). I like to take the zucchini and slice it up with some white onions then cook it in a good spaghetti sauce to make Italian Stewed Squash. It's quick and easy plus it can be used for a few meals as long as you keep it covered.
