~Bruschetta~

Bruschetta (Italian pronunciation: [brusˈketta] is a food the origin of which dates to at least the 15th century from central Italy. It consists of grilled bread rubbed with garlic and topped with extra-virgin olive oil, salt and pepper. Variations may include toppings of spicy red pepper, tomato, vegetables, beans, cured meat, and/or cheese; the most popular American recipe involves basil, fresh mozzarella, and tomato. Bruschetta is usually served as a snack or appetizer. In Italy, Bruschetta is often prepared using a brustolina grill. In Tuscany, bruschetta is called fettunta, meaning "oiled slice"
Definition according to Wikipedia!
Bruschetta is one of my family's favorite things to eat! We make it alot! With the over abundance of Tomatoes lately, we eat it 2-3 times a week. Usually for lunch. Heres my recipe!
4-5 good size tomatoes (I used Beefsteak) Diced up into small chunks
Half a small Red Onion Diced
3-4 cloves of Garlic Diced
Kosher Salt and BlackPepper to taste
2 tbl spoons olive oil
10-12 Fresh Basil Leaves Ruoghly Chopped
Mix it up and let it sit for about 30 min and let the flavors combine

The Bread
Use the kind you like.
My favorite to use is Chibatta.
We use all differnt breads! Usually whatever we have on hand
I roast about 6-8 Garlic cloves ( until they are soft, about 20-30 min)
Remove the paper and then i spread them on the bread and sprinkle some Parmesian Cheese on each piece.
Put in the oven and Broil it, till cheese is melted and bread looks crunchy.
Then I add the Bruschetta to each piece of bread and add more Parmesian cheese.
I put it on a plate and we pig out till none is left!

Another thing we make is Bruschetta chicken sandwiches! They are so yummy. Will grill chicken breasts and melt Mozzerella and add Bruschetta. They are divine!

Happy Eating!

  1. This looks delicious. I still haven't made my bread yet, but maybe I'll do that tomorrow cause I'm having a friend up to make salsa and salsa verde. I can't wait to try it.
